Method
- Preheat the oven to 350°F. Grease 2 non-stick bread pans (9.5 x 5).
- In a large mixing bowl add softened butter and sugar.
- In a separate bowl mash bananas with a fork until chunky. Add bananas and eggs to butter mixture and blended.
- In a separate bowl, add flour, baking soda and salt together and whisk. Pour flour mixture into the better and blend.
- Add vanilla extract and raisins into the batter.
- Pour mixture into bread pans. Bake at 350˚F for 60 min or until a toothpick inserted into the center comes out clean.
- Let banana bread rest then transfer to a wire rack to finish cooling.
Notes
Reduce the recipe in half if you only want to make 1 pan of banana bread
