This banana bread recipe is simple to make, and our favorite way to use up overripe bananas. You can even use this same recipe to make banana muffins.

This is the easiest banana bread recipe. No fancy equipment is needed. A simple electric hand mixer is all you need, or you can whisk by hand.

Healthy Banana Bread Substitutions

  • Replace eggs with ground flaxseeds ( 4 eggs = 4 tbsp ground flax mixed with 12 tbsp of water ).
  • Replace sugar with honey.
  • Reduce sugar to 3/4-1 cup if you’re using overripe bananas.

Ripen Bananas Quickly – Hack

If you don’t have any ripe bananas here is a quick hack.

Place bananas on a baking sheet and pop in the oven at 300˚F for 10-15 minutes. Cool completely and proceed with the recipe.

How To Make Moist Banana Bread

  • Preheat the oven to 350°F.
  • Grease 2 non-stick bread pans (9.5 x 5).
  • In a large mixing bowl add softened butter and sugar.
  • In a separate bowl, mash bananas with a fork until chunky.
  • Add bananas and eggs to butter mixture and blended. 
  • In a separate bowl, add flour, baking soda and salt together and whisk.
  • Pour flour mixture into the better and blend.
  • Add vanilla extract and raisins into the batter.
  • Pour mixture into bread pans.
  • Bake at 350˚F for 60 min, or until a toothpick inserted into the center comes out clean.
  • Let banana bread rest, then transfer to a wire rack to finish cooling.

Storing Banana Bread

This banana bread recipe will stay moist for a few days.

Keep banana bread at room temperature.

  • Cool banana bread completely.
  • Grab an airtight storage container and place a paper towel in the bottom of the container. Add banana bread on top of the paper towel. The paper towel will absorb any excess moisture and keep it fresh for a few days.
  • Firmly seal the lid in place.
  • Banana bread will stay fresh like this for 3-4 days.
