Bring a pot of water to a rolling boil. Cook penne pasta according to the instructions on the box.
Once cooked, remove and strain.
In a large bowl add shrimp and seasoning ( all purpose seasoning, paprika, onion powder, black pepper, salt, honey, thyme, Jerk seasoning. Mix and marinate for 30 mins.
Heat a skillet medium-high heat add olive oil, and cook shrimp. ( about 3 minutes per side. until pink and cooked through ) Remove shrimp and plate.
Wipe pan and add 2 tablespoons olive oil in. Add onion, green onion and peppers. Cook them down about 5 minutes to soften.
Add all purpose seasoning, salt and pepper to taste. Cook for 1 minute, stirring occasionally.
Add heavy cream ( or coconut milk ), cheddar cheese and simmer for 5-10 minutes, until sauce thickens
Add pasta and toss with cream sauce.
Add Shrimp to pasta and mix ( save a few to serve on top )
Top with remaining jerk shrimp
Garnish with fresh parsley. Enjoy!
