Ingredients
- 1 mango diced and cubed
- 1/4 cup red onion chopped
- 10 large strawberries diced and cubed
- 2 tbsp cilantro finely chopped
- 1/2 lemon juiced, plus more if needed
- pinch of salt
- pinch of pepper
- 1 tbsp olive oil
- 1 bunch asparagus (315g)
How To Make Asparagus With mango And Strawberry Salsa
This dish is fresh and clean. All the flavors make it the perfect Spring or Summer side dish.
- Cut bottom stems off asparagus.
- Add asparagus to the parchment paper lined baking sheet.
- Sprinkle with salt, pepper, and olive oil.
- Place in over at 400F for 10-15 mins.
- While asparagus is in oven, you can make the salsa.
- Cut up salsa ingredients mango, strawberries, red onion and cilantro
- Add salsa ingredients to a bowl, drizzle with lemon juice. Mix to combine and season with salt and pepper. Set aside and let sit for 10 minutes to absorb flavors.
- Transfer asparagus onto a serving tray and top with mango-strawberry salsa. Serve.
