Jamaican Easter Bun

Easter is right around the corner and that means Jamaican Easter Bun is on the menu. This dessert is soft, filled with fruits, and absolutely delightful anytime

Ingredients
  

  • 1 cup port red wine ( or 1/2 cup if using soak fruit in wine)
  • 3 1/2 cups all purpose flour 
  • 3 tbsp butter 
  • 2 1/2 tsp baking powder 
  • 2 eggs 
  • 2 cup brown sugar 
  • 1 tbsp molasses 
  • 1 cup raisins 
  • 1/2 cup mixed peel
  • 1/4 cup cherries 
  • 1 tsp cinnamon powder 
  • 1 tsp nutmeg 
  • 1 tsp all spice
  • 1/2 tbsp vanilla extract 
  • 1/2 tbsp almond essence
  • 1/2 tsp salt
Glaze
  • 1 1/2 tsp honey
  • 1 1/2 tsp butter

Method
 

  1. Mix flour, baking powder, cinnamon, nutmeg, all spice and salt. Set aside.
  2. Add raisins to a pot of water and soak over medium heat for about 10 mins.
  3. Add melted butter, eggs, sugar to a large bowl and mix with hand mixer
  4. Add in molasses, almond essence and vanilla to butter mixture.
  5. Separately, add mixed fruits, raisins and wine to a blender and pulse 2-3 times.
  6. Add mixed fruits to liquid mixture. 
  7. Combine dry ingredients into liquids and mix with a mixer.
  8. Pour into a greased baking pan
  9. Bake at 350 F for approximately 1 hour 
  10. Remove from oven and set aside
  11. Glaze - Melt butter and honey on stove - glaze bun with a basting brush while hot.
