Heat grill to 400F or medium high heat. Use a a Sharpe knife or kitchen shears to cut the lobster tails. Pierce the lobster tail and cut down the center of the shell, all the way to the tail. Do not cut all the way through, you want to stop when you hit the bottom shell.
Use your thumbs to separate the flesh from the shell, and lift the lobster meat over the shell.
Season tails with salt, pepper, paprika and olive oil. Rub seasoning into lobster tails generously.
Place the lobster tails on the grill, and add a spoonful of herb butter on top. Grill for about 4 minutes.
Add another spoonful of herb butter and grill for another 2-3 minutes or until lobster meat is opaque.
Remove from grill. Add lemon wedges and fresh parsley for garnish.
Serve immediately and enjoy.
