Avocado Hummus

If you love avocados as much as we do this Avocado Hummus is the ultimate dip. Use it to dip veggies, spread it on toast, or lay it over sweet potatoes.

- 1 can chickpeas drained
- 1/4 cup tahini
- 2 tsp lemon juice squeezed
- 2 tsp extra virgin olive
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1 ripe avocado cored and peeled
- 2 tbsp water
- paprika to garnish
Add chickpeas into a small saucepan over Medium-high and let boil until soft, about 15 minutes.
Drain chickpeas. Transfer to a food processor with all ingredients, tahini, lemon juice, olive oil, cumin, salt, and avocado. Process until smooth and creamy.
NOTE: If hummus is too think add a little water until reaching your desired consistency.
Add hummus to bowl and drizzle with olive oil. Sprinkle with paprika and serve.
