This Mexican lasagna is comfort food without all the carbs! Tortillas layered with ground turkey and cheese and topped with a few Mexican favorites. You won’t miss the carbs with this meal and it’s all thanks to these low carb tortillas.

HOW DO YOU MAKE MEXICAN LASAGNA?
- Sauté onions and mushrooms in a non-stick skillet.
- Add ground turkey, cook until brown.
- Add taco seasoning, tomato paste, water. Simmer about 10 mins and set aside.
- Preheat oven to 350 degrees.
- Cut tortillas into four pieces.
- Add olive oil to the bottom of the baking dish
- Start layering, tortillas, meat mixture, cheese, repeat.
- Top with tortilla pieces and sprinkle cheese to finish.
- Bake for 25-30 minutes.
- Allow to cool before serving.
- Top with sour cream and avocado if desired.

VARIATIONS & OPTIONAL INGREDIENTS
You can easily customize this dish with your favorites.
- Protein Options: Ground Turkey, Ground Chicken, Shredded chicken, Shredded beef.
- Filling Options: Black Beans, Pinto Beans, Refried Beans, Bell Peppers, Zucchini.
- Cheese Options: Cheddar Cheese, Mozzarella Cheese, Colby Cheese, Mexican Blend, Pepper Jack.
- Tortilla Options: Low Carb Tortillas, Corn Tortillas, Flour Tortillas, Tortillas Chips.
HOW TO REHEAT LASAGNA
To reheat Mexican Lasagna from the refrigerator, cover it with foil, and bake at 350 degrees F for about 30 minutes.

Mexican Lasagna
Ingredients
- 5-6 large tortillas
- 1 – 1 1/2 pounds ground turkey or ground beef
- 2 onion
- 1 cup chopped mushrooms
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- 2 tbsp tomato paste
- 1/4 cup water
- 8 ounces Mexican shredded cheese
- 4 tbsp sour cream optional
- 1 avocado optional
Instructions
- Heat the oil in a large skillet and add onions and mushrooms. Cook until translucent.
- Add ground turkey to one side of the pan and cook until no longer pink.
- Add in taco seasoning, tomato paste, water. Simmer about 10 mins and set aside.
- Preheat oven to 350 degrees.
- Add a little olive oil to the bottom of the baking dish.
- Cut each large tortilla into 4 pieces.
- Lay tortillas piece on the bottom of baking dish.
- Layer one third of the meat mixture over the tortillas.
- Sprinkle 2 ounces of shredded cheese over the meat.
- Layer tortilla pieces on top and repeat the process two more times.
- Top with the last 5-6 tortilla pieces and sprinkle cheese on top.
- Bake for 25-30 minutes.
- Allow to cool for 20 minutes before serving
- Top with sour cream and avocado if desired.
