Stuffed Baby Mushrooms might not be everyone’s favorite vegetable, but stuff it with cheeses and you’ve changed the game. These stuffed baby mushrooms are filled with ground turkey and plenty of cheese.
How To Make Stuffed Mushroom Caps
Remove the mushroom stems, then place the mushroom caps on a baking pan. Do not throw the stems away we will use these later on.
In a large skillet add some olive oil and ground turkey, cooking until brown. Add onions and green onions to the ground turkey and cook until translucent. Season with salt, pepper and paprika.
In a large bowl, combined softened cream cheese, freshly grated cheddar and mozzarella cheese, and bacon. Mix together until the ingredients are combined.
Add the ground turkey mixture to the cheese mixture and blend.
Stuff the filling evenly into all of the mushroom caps.
NOTE: Mushrooms will shrink as they bake so the stuffing might puff up a bit higher.

Things To Keep In Mind
This recipe is very quick to prepare as a side dish for dinner. To make it come together even easier you can pre-cook a batch of bacon and store to use in dishes throughout the week.

Stuffed Baby Mushrooms For Any Occasion
Ingredients
- 1 lb baby mushrooms
- 4 oz cream cheese, softened
- 1/2 lb ground beef/turkey
- 1 onion
- 2 tbsp butter
- cheese
- salt
- pepper
- 2 tbsp freshly chopped parsley, plus more for garnish
Instructions
- Preheat oven to 375°. Grease a baking sheet.
- Remove stems from mushrooms and roughly chop stems. Place mushroom caps on baking sheet.
- In a medium skillet over medium heat, melt butter. Add beef/turkey and brown. About 10 mins
- Add onions, chopped mushrooms stems and cook until most of the moisture is out, 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
- In a large bowl mix together cheese, cream cheese and bacon.
- Add beef/turkey mixture to the cream cheese mixture and mix.
- Fill mushroom caps with filling and sprinkle with more cheese on top
- Bake until mushrooms are soft and cheese is golden. About 25-30 minutes.
- Garnish with parsley to serve.
