BANANA MUFFINS RECIPE
This banana muffin recipe is simple to make, and a great way to use up overripe bananas.
No fancy equipment is needed to make these banana muffins. A simple electric hand mixer is all you need, or you can whisk by hand.
BANANA MUFFINS RECIPE INGREDIENTS
- 7 very ripe bananas (medium/large)
- 1 cup unsalted butter
- 1 1/4 cups granulated sugar
- 4 large eggs lightly beaten
- 1 tsp salt
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp vanilla extract
- 1 cup raisins
This recipe makes 24 muffins, if you prefer to only make 12 muffins, cut the measurements in half.
HEALTHY BANANA BREAD SUBSTITUTIONS
- Replace eggs with ground flaxseeds ( 4 eggs = 4 tbsp ground flax mixed with 12 tbsp of water ).
- Replace sugar with honey.
- Reduce sugar to 3/4-1 cup if you’re using overripe bananas.
RIPEN BANANAS QUICKLY – HACK
If you don’t have any ripe bananas here is a quick hack.
Place bananas on a baking sheet and pop in the oven at 300˚F for 10-15 minutes. Cool completely and proceed with the recipe.
HOW TO MAKE BANANA MUFFINS
- Preheat the oven to 350°F.
- Place liners in 12-muffin pan x2.
- In a large mixing bowl add softened butter and sugar.
- In a separate bowl, mash bananas with a fork until chunky.
- Add bananas and eggs to butter mixture and blended.
- In a separate bowl, add flour, baking soda and salt together and whisk.
- Pour flour mixture into the better and blend.
- Add vanilla extract and raisins into the batter.
- Pour mixture into muffin pans.
- Bake at 350˚F for 25 min, or until a toothpick inserted into the center comes out clean.
- Let banana bread rest, then transfer to a wire rack to finish cooling.
STORING BANANA MUFFINS
Keep at room temperature.
- Cool banana muffins completely before storing.
- Grab an airtight storage container and place a paper towel in the bottom of the container. Add muffins on top of the paper towel. The paper towel will absorb any excess moisture and keep it fresh for a few days.
- Firmly seal the lid in place.
