Pan seared salmon is tasty by itself, however adding a lemon and parmesan sauce takes it to another level.

Pan Sear Salmon Perfectly
The trick for getting a perfect sear on salmon starts with making sure the salmon fillets are completely dry before placing in the pan. Wash your salmon and place on a paper towel for about 10 minutes to remove all moisture from the skin.
After the salmon is dry you will want to season your salmon generously.
When your salmon is ready, heat pan over high heat until quite hot, then add oil.
Place salmon skin side down in the pan and reduce the heat to medium. Cook for about 5 minutes, or until the skin is crispy. Flip the salmon and cook the other side for another 4-5 minutes or so ( this will depend on whether you prefer your salmon medium, or well done ). Salmon will continue to cook a little more when you remove it from the heat!

Coconut milk in this recipe adds a little natural sweetness that you wouldn’t otherwise get. However if you’re not a fan of coconut milk you can replace it with whole milk or heavy cream.
Pan Seared Salmon with Lemon Parmesan Sauce
Ingredients
- 4 skin-on salmon fillets
- 1 large onion ( chopped )
- 1 1/2 cup coconut milk
- 3/4 cup parmesan cheese
- 1 lemon
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
- 1 stalk rosemary
Instructions
- Wash salmon filets and place salmon on a paper-towel lined plate to dry for 5-10 minutes per side. Season salmon with salt and pepper, flip over and season the next side with salt and pepper
- Pour oil in a large pan/skillet. Heat over high heat. When hot, add salmon skin side down. Cook 4-5 mins, until skin is crisp. Flip and cook other side, about 4 mins, until salmon registers about 120 F. Cook longer if you desired, but remember fish continues to cook a little after you remove it from the pan.
- Remove salmon from pan and set aside. In the same pan add onions and cook about 3 minutes, until tender. Pour in coconut milk and parmesan, juice from 1 lemons (start with 2 Tbsp, then add more if you love lemon) and rosemary, then stir to combine. Taste sauce and adjust seasoning as needed.
- Remove from the heat, then return salmon filets to the pan.
- Serve immediately with your favorite veggies or whatever you desire.
